Some chefs leave a dish behind. It goes on the wall of menus in the corridor upstairs, and occasionally back onto the table when the person who asked for it returns.

The caper-leaf salad

Left by Yiayia Nausika in June 2022 and now made every week the wall gives us enough leaves.

Beaufort with chestnut honey

Sofia di Tornello put Renaud’s wheel next to honey from Stamatia’s brother-in-law and refused to explain herself. She was right.

Snails in green sauce

The wall of menus

Every residency ends with the chef signing the last menu of the fortnight. They are framed, badly and by us, and hung along the upstairs corridor in no order at all. Guests read them on the way to bed and come down the next morning with questions.
